Ingredients for Sweet and Sour Yellow Croaker: One Yellow Croaker, 4g sugar, appropriate amount of Sichuan peppercorns, a few slices of ginger, appropriate amount of green onions, 2g salt, 3 tablespoons of starch, 3 tablespoons of flour, 2 egg yolks, appropriate amount of cooking oil, 2 tablespoons of fragrant vinegar, 3 tablespoons of steak sauce or tomato sauce.
Steps for making Sweet and Sour Yellow Croaker:
Step 1: Prepare the ingredients.
Step 2: Clean the fish thoroughly and pat dry with kitchen paper.
Step 3: Soak the green onions, raw ginger, and Sichuan peppercorns in a small amount of boiling water for five minutes.
Step 4: Squeeze out the water and marinate, then apply salt on the surface.
Step 5: Combine starch, flour, a little cooking oil, and two fresh egg yolks.
Step 6: Stir until the mixture is stringy; you may add a small amount of water to adjust.
Step 7: Coat the marinated fish with the batter.
Step 8: Alternatively, apply the batter to the entire fish with your hands.
Step 9: Heat oil in a pan and fry the fish, first holding the ends to set the shape, then fry until cooked through.
Step 10: Prepare the sweet and sour sauce.
Step 11: Sauté minced garlic, ginger, and Sichuan peppercorns, then add the pre-mixed sauce (vinegar, steak sauce or tomato sauce, soy sauce, sugar, starch, mix well).
Step 12: Thicken the sauce and drizzle over the fish, garnish with shredded green onions.
Cooking Tips for Sweet and Sour Yellow Croaker: Choose fish with fewer bones, and for larger families, you can opt for a bigger fish. The key is to marinate it well, as the saying goes ‘salt fish, light meat’, so use a bit more salt than usual when cooking.
