Ingredients for Spring’s Yan Du Xian:
Cured meat 200g, Pork ribs 800g, Spring bamboo shoots 2, Cooking wine to taste, Sichuan peppercorns 10-15, Green onion sections to taste, Ginger slices 3-5.
Steps for making Yan Du Xian:
1. Soak the cured meat in clear water in advance.
2. Soak the pork ribs in clear water to remove blood.
3. Clean the spring bamboo shoots, peel and cut into pieces for later use.
4. Cut the cured meat into equal-sized cubes.
5. In a pot, add cooking wine, Sichuan peppercorns, green onion sections, and ginger slices, then blanch the cured meat and pork ribs.
6. Blanch the spring bamboo shoots and set aside.
7. Take a large casserole, put in the cured meat and fry to release the fat.
8. Add the pork ribs and continue to stir-fry.
9. Add ginger slices and green onion sections to stir-fry until fragrant.
10. Pour in enough hot water, cover the pot, and simmer for 90 minutes.
11. After the time is up, add the spring bamboo shoots.
12. Continue to simmer for another 20 minutes.
13. The soup is fresh and the meat is tender, no need to add salt.
