Sichuan Style Stir-Fried Cauliflower with Bacon

Ingredients for Sichuan Style Stir-Fried Cauliflower with Bacon: Cauliflower (as needed), Bacon (as needed), Vegetable Oil (as needed), Salt (a pinch), Sichuan Peppercorns (a pinch), Ginger (2 slices), Garlic (as needed), Red Chili Peppers (as needed).
Method:

1. Boil the bacon until cooked, then slice and set aside.

2. Blanch the cauliflower in boiling water, then immediately transfer it to cold water to retain its crispness.

3. Stir-fry the dried red chili peppers until slightly charred, then add the bacon and stir-fry until the bacon begins to release oil, then set aside.

4. Heat an empty pan, pour in oil, and add garlic, ginger, chili peppers, onions, or garlic sprouts according to your taste preferences.

5. Add the cauliflower and quickly stir-fry, then season with salt. Note that the bacon is already seasoned, so adding salt together may make it too salty.

6. Finally, add the previously stir-fried bacon and quickly mix everything together before serving.

Cooking Tips:

1. Bacon is often salty and dry; boiling it for a longer time can improve its texture.

2. Cauliflower can be dirty and difficult to clean; soaking it in a solution with a spoonful of salt can help it become cleaner.
