Method: Step 1: Boil water in a pot, add 2 lemon slices, a pinch of Sichuan peppercorns, and a few slices of ginger. Step 2: Tie a small bunch of green onions and place it in the pot with a piece of pork belly, skin on, and cover to cook. Step 3: The meat is cooked when it can be easily pierced with a chopstick. Step 4: Rinse the cooked meat with cool boiled water or purified water to remove surface fat and quickly cool it down. Step 5: Prepare the side dishes and seasonings. Step 6: Peel the cucumber and carrot into thin slices using a peeler. Step 7: Slightly salt the carrot peels, let them marinate for a moment, drain excess water, and then arrange them with cucumber slices on a plate; set aside. Step 8: Slice the pork into thin pieces and arrange them neatly. Step 9: Finely chop the ginger and garlic, add a pinch of salt, and mash into a paste using a mortar and pestle.
