Spicy Chicken Dish – Authentic Sichuan Cuisine Recipe

Ingredients for Spicy Chicken: Half a chicken, five dried red chili peppers, a small piece of cinnamon, four bay leaves, one teaspoon of chopped chili, one teaspoon of broad bean paste, a piece of old ginger, two garlic cloves, one tablespoon of cooking wine, a small amount of salt, a small amount of pepper, a small amount of Sichuan peppercorns, one teaspoon of oyster sauce, one teaspoon of dark soy sauce, one teaspoon of light soy sauce, one teaspoon of chicken essence, and a handful of chopped green onions.
Method: Step 1 – Chop the chicken into pieces and wash, then drain the water. Step 2 – Wash the dried chili peppers and cut them into sections, shred the ginger, crush the garlic, break the bay leaves and cinnamon into small pieces, and set aside the chopped green onions. Step 3 – Heat oil in a pan until it’s hot and smoking, then add ginger and garlic, followed by chopped chili, bay leaves, cinnamon, and chili pepper sections for stir-frying.


Step 4 – Add one teaspoon of broad bean paste and stir until the paste releases red oil. Step 5 – Add the drained chicken to the pan and stir-fry with the seasonings. Step 6 – Add cooking wine and stir-fry for two minutes. Step 7 – Add dark soy sauce and light soy sauce for stir-frying. Step 8 – Add pepper and stir-fry. Step 9 – Add Sichuan peppercorns; if you don’t have peppercorns, use Sichuan peppercorn oil instead.


Taste for salt, as the broad bean paste and chopped chili already contain a high amount of salt, and usually, no additional salt is needed; however, if you prefer a stronger taste, add a small amount of salt. Step 10 – Add oyster sauce. Step 11 – Sprinkle with chicken essence. Step 12 – Sprinkle with more chopped green onions and stir-fry evenly before serving. Step 13 – Serve hot.
